Class 10 or Class 12 Required

Class 10 is enough for the craftsmanship route; Class 12 opens the hotel management degree.

Craftsmanship certificate in Food Production, or ITI Required

One year at an IHM, or the ITI food production trade. This is the standard entry qualification for a brigade kitchen, and the fastest route to a Commis post.

1-2 years

Join a kitchen as Commis III Required

The brigade counts downwards - Commis III is the entry grade, then II, then I. Expect to be moved between sections and to be told very little while you learn to watch.

2-3 years

Work through the sections Required

Garde manger, butchery, sauces, bakery, Indian and continental hot ranges. A Commis who has only worked one section cannot be promoted, so ask for rotation.

2-3 years

Rise to Commis I Required

Consistency under pressure is the whole test. Producing eighty covers correctly on a bad night is what gets noticed, not one perfect plate.

Move up to Demi Chef de Partie Required

The first supervisory rung. From here the route runs to Chef de Partie, which is where you own a section.
