The hours are the reality nobody prepares for - long shifts, split timings, and working every evening, weekend and festival while everyone else is celebrating. Early pay is low for the effort. Kitchen culture in parts of the industry still tolerates shouting and harassment, though this is slowly changing. Heat, burns and standing all day take a physical toll over years. Opening a restaurant is a business with a high failure rate, and cooking well is only part of what it needs.
The route in, step by step
6 steps from where you are now.
Class 12, any stream Required
Class 10 is enough for the craftsmanship route. Class 12 opens the degree.
A hotel management degree, or a craftsmanship certificate Required
B.Sc in Hospitality and Hotel Administration through NCHM JEE, or BHM. One year for an IHM craftsmanship certificate in food production, which gets you into a kitchen far sooner.
Work the Commis grades Required
Commis III, then II, then I, across the sections - garde manger, butchery, sauces, bakery, Indian and continental. Four to six years, and there is no honest way to shorten it.
Chef de Partie - own a section Required
A station, its mise en place and its commis chefs. You become accountable for other people's output as well as your own.
Learn cost, not just cooking Required
Food cost percentage, portion control, indenting and wastage. Chefs who cannot control cost do not become Sous Chefs, however well they cook.
Sous Chef, Executive Chef, or your own place Optional
Be clear about the arithmetic: twelve to eighteen years from starting to Executive Chef is normal, and by then you cook rarely. Opening a restaurant is a separate business risk from being a good chef.

Do I need a hotel management degree?
It helps for hotel kitchens and structured progression. Many chefs come through apprenticeship instead, where demonstrated skill matters more than the certificate.
What are the hours really like?
Long shifts, split timings, and working every evening, weekend and festival. This is what ends most kitchen careers rather than the cooking.
Is opening a restaurant realistic?
Possible but risky. Failure rates are high, and cooking well is only a part of what the business actually requires.
Has kitchen culture improved?
Slowly. Shouting and harassment are still tolerated in parts of the industry, though the better kitchens have changed considerably.
